Donna’s Cheesecake

Crust

2 1/2 cups graham crumbs

2 tbsp sugar

1/2 cup butter

Filling

2.5 x 250g cream cheese

1 can sweetened condensed milk

1/3 cup lemon juice

1 tsp vanilla

Topping

Fruit, can of cherry pie filling, etc.

Whipping cream

Directions

Beat cream cheese with milk.

Add lemon juice and vanilla, pour into shell.

Chill, then spread topping over the filling.

Chill again. Serve with whipped cream.

Strawberry Topping

Thaw 1 package frozen strawberries

Drain the berries and save the juice

Heat the juice and add 1 tbsp cornstarch mixed with a small amount of water. Taste for sweetness and add some sugar if needed and a few drops of lemon juice.

Cook until thick and clear. Cool slightly and add the berries. Stir.

Cool and spread on top of the cheese cake.
