Lemon Pie

Lemon Pie
Makes enough for 3 pies
Ingredients
  • Juice and rind of 3 lemons
  • 6 tbsp corn starch
  • Butter, size of 3 eggs
  • 3 cups boiling water
  • 6 egg yolks (use whites for meringue)
Instructions
  1. Cook until thick in double boiler.
  2. Let cool, then pour into cooled pie shell.
  3. Cover with meringue and brown under broiler.
