Lemon Pie
Lemon Pie
Makes enough for 3 pies
Ingredients
- Juice and rind of 3 lemons
- 6 tbsp corn starch
- Butter, size of 3 eggs
- 3 cups boiling water
- 6 egg yolks (use whites for meringue)
Instructions
- Cook until thick in double boiler.
- Let cool, then pour into cooled pie shell.
- Cover with meringue and brown under broiler.
