Minestrone Soup (Grammy’s recipe)

Ingredients
- 3 – 4 Italian sausages
- 1 garlic clove
- 1/2 c onion, celery, carrots and red peppers, chopped
- 4 cups chicken broth
- 1 can stewed tomatoes
- 1 can drained kidney beans
- 1/2 c dry macaroni
- 2 tbsp parsley
- 1/2 tsp basil
- pinch thyme
- 1 bay leaf
- salt and pepper to taste
Instructions
- Take skin off sausage, break into pieces and brown. Once cooked, add garlic, onion, carrots and celery. Cook till onions transluscent. Add remainder of ingrediants. Bring to a boil, simmer 20 minutes or more. Serve with buns or biscuits. Serves 6-8. (Great for a slow cooker, but add macaroni near the end.)
