Minestrone Soup (Grammy’s recipe)

  • 3 – 4 Italian sausages
  • 1 garlic clove
  • 1/2 c onion, celery, carrots and red peppers, chopped
  • 4 cups chicken broth
  • 1 can stewed tomatoes
  • 1 can drained kidney beans
  • 1/2 c dry macaroni
  • 2 tbsp parsley
  • 1/2 tsp basil
  • pinch thyme
  • 1 bay leaf
  • salt and pepper to taste
  1. Take skin off sausage, break into pieces and brown. Once cooked, add garlic, onion, carrots and celery. Cook till onions transluscent. Add remainder of ingrediants. Bring to a boil, simmer 20 minutes or more. Serve with buns or biscuits. Serves 6-8. (Great for a slow cooker, but add macaroni near the end.)
